Preparation:
The anchovy fillets Spanish Delicatessen are placing in a container in layers, one above the other, each layer adding about a tablespoon of oil and some garlic and parsley, until you reach the final, which will add the oil until it floats, along with garlic and parsley, then serve.

Anchovies in this way last well in the fridge (and used for all kinds of appetizers and salads.
